Mustard Prawn

INGREDIENTS
      1. Prawn                         1 Kg
      2. Mustard seeds          1½ tablespoon
      3. Vinegar                       sufficient to soak mustard seeds
      4. Poppy seeds              1 tablespoon
      5. Cumin seeds             ½ tablespoon
      6. Dried Red chillies     16 to 20
      7. Onion                          1 medium size
      8. Garlic                          3 cloves
      9. Ginger                        ½ cm piece
    10. Turmeric powder       ¾ tablespoon
    11. Salt                              to suite your taste
    12. Sugar                          ¾ tablespoon
    13. Cooking Oil                3 tablespoon

METHOD
1. Soak the mustard seeds in vinegar for 8 to 10 hours in a bowl.
2. Shell and devein the prawn, if not done by seller, and wash.
3. Cut the onion and ginger into medium size pieces.
4. Grind mustard with vinegar to make a coarse paste. Add poppy seeds, cumin seeds, red chillies, onion, garlic, ginger and turmeric powder together and grind into a fine paste.
5. Heat oil in a pan and add the above masala paste. Keep stirring intermittently and fry the paste till oil separates from the masala.
6. Add sugar and salt and stir.
7. Add cleaned prawns and fry with masala paste.
8. Cook for about 5 minutes till the gravy becomes thick.
